Alpes Andinos is a small organization of coffee farmers working in the La Coipa and Huabal districts of Cajamarca in northern Peru, founded in 2019 and currently consisting of 150 members. This lot is produced by 30 smallholder farmers growing fully-washed, organic-certified coffees near the village of La Naranja at elevations ranging from 1800-1850 meters above sea level.
After picking only ripe cherries, these producers undertake an extended double fermentation process, first fermenting the coffees in cherry for 48 hours before pulping on the fourth day and fermenting for an additional 48 hours to fully loosen the mucilage for washing. The fully washed parchment is then transferred to solar dryers for 15-2- days until ideal moisture levels have been achieved.
